Extravirgin olive oil obtained from olives of monocultivar coratina, produced in Contrada San Domenico and Zagaria, pressed on ancient crusher granite millstones and bottled in the farm Zagaria with the typical characteristics of the variety, and of the area of production.

The lively and aggressive, sweet, fruity fragrance of unripe olives, the pleasant taste of bitter and spicy, very balanced and freshness, enhances the flavors and aromas of traditional cuisine.
Much appreciated for the intense fruity fragrance and appearance of dense and opaque. It's particularly digestible ingredient and deserves a place of absolute importance as a condiment of the most typical Mediterranean recipes.
Great protector of the stomach and intestine, active against the formation of free radicals.
The extravegine olive oil is subjected to chemical / physical and organoleptic controls before being packaged.

San Domenico and Zagaria, the two estates that make up the Azienda Agricola del Conte Spagnoletti Zeuli, occupy some 1,000 acres in the countryside of Andria, in the province of Bari. While most of the land is dedicated to olive groves, the slopes of the outlying hills are planted with rows of Bombino Nero, Montepulciano and Troia, the grapes from zvhich Castel del Monte, glory of the local wine culture, is born. Blessed by calcareous soil and a dry, mild climate, war¬med by the sun even in the winter, this is ideal olive country. The trees themselves are cultivated in accor¬dance with the so-called “Barese chalice ” method, each plant from 9 to 15 feet in height and hollowed out at the center, as dictated by centuries of local tradition. The two varieties of olives grown here are Coratina and Cima di Bitonto, pride of the northern part ofBari pro¬vince, ivhich, thanks to expert processing techniques proven over time, render an oil of exceptional richness and density, as well as excellent organoleptic qualities such as flavor, fragrance and color. The Azienda has recently set aside 15 acres of experi¬mental nurseries for the acclimatization and eventual introduction of the Leccino and Frantoio varieties; the “mono-cone” system used here facilitates both pruning and mechanical harvesting. All of the groves are outfit¬ted with drip irrigation systems capable of providing each plant with up to 4 gallons of water per hour.
